苦瓜排骨煲

Ingredients

  • 1 pork ribs
  • 1 yellow beans
  • 1 salted pickled vegetables
  • 1 ginger garlic paste
  • 1 salt
  • 1 bitter melon
  • 1 water

Instructions

  1. 黃豆提前用清水浸泡至少1-2小時
  2. 排骨切塊,放入冷水鍋中加熱至沸騰(可加入少許米酒),汆燙約3-5分鐘撈出,用清水沖洗乾淨血水和雜質
  3. 苦瓜洗淨後對半切開,用湯匙挖除內部的瓜囊和白色海綿層(去乾淨白瓤能大幅減少苦澀味),然後切成大塊
  4. 湯鍋中加入足量清水,放入黃豆、排骨和薑片,大火煮滾後轉中小火先煲30分鐘,讓黃豆出味
  5. 將切好的苦瓜塊和鹹酸菜放入鍋中,繼續以中小火慢煲約1小時至苦瓜變軟爛、湯水濃郁
  6. 加入適量食鹽調味即可食用
